
For the purple olives, go with Kalamatas. They're Greek and purpley in color. Not to mention delicious!
Some whole wheat pita bread will serve nicely as your flat bread.
I did a bit of research and decided Manchego would be a great cheese for this dish. It is sheep's milk cheese from Spain and its rich and buttery taste pairs fairly well with the strongwine or, in this case, ruby port (Portuguese fortified wine). Stick to Manchego that is younger as it gets sweeter with age. No doubt still delicious, but the sweetness might be overpowering for some when paired with the sweetness of the port.
All that's left is the chickpea paste! I chose to use hummus that I bought from the store, but it is also easy to make some if you have a mind. I personally like my hummus a bit spicy and since the Dornish are very into fiery peppers, I went with my favorite jalapeno hummus.
