Kvothe's Harvest Vegetable Soup

Ingredients

  • 1 medium yellow onion
  • 3 large carrots
  • 3 cloves garlic
  • 3 medium white potatoes (about 1 lb.)
  • 2 medium zucchini
  • 28 oz fire roasted dice tomatoes
  • 32 oz vegetable broth (I used low sodium)
  • 2 bay leaves
  • 1 tsp salt (or to taste)
  • 1 tsp black pepper (or to taste)
  • 1 tsp thyme
  • 1 tsp oregano

Instructions

  1. Roughly chop or cube all vegetables to about the same size. 

  2. Add all ingredients to the 7 quart crockpot and cover. Cook for 6-8 hours on high. The cooking time will depend on how hot your crock pot gets. I left it on high for about 6 hours and switched to low overnight and it was absolutely delicious. Keep an eye on it and adjust the time as needed!
