Garlic Parmesan Potato Wedges with Seasoned Sour Cream

I am always in search of easy, cheap, but delicious snack ideas. These check all the boxes! In under an hour, you can have a tray of crisp, restaurant-quality potato wedges to devour. No need to do much measuring on this one, either, as it works best to season to taste. This snack is also a great way to get rid of a few potatoes you want to use up before they spoil. Whether you’re just enjoying an afternoon watching a movie or having friends over to watch a game, this simple, savory snack will be a big hit.



Potatoes (we use Idaho)
Olive oil
Parmesan cheese (grated)
Italian seasoning
Garlic powder

Sour cream
Hot sauce (we use Cholula)



Start by turning your oven up to 425 F. Wash however many of your potatoes you need for your group and slice them into whatever size or style of wedge you’d like. Place them in a large bowl and coat them with olive oil. Season your potatoes with the Parmesan, paprika, Italian seasoning, garlic powder, salt and pepper. You may either mix these in a separate bowl beforehand or sprinkle them onto the potatoes one by one. Using your hands, toss the potatoes with the seasoning to coat each potato on all surfaces. Then lay the potatoes out, skin down, on a foiled cookie tray and pop them into the oven for 35 minutes. While you’re waiting for the potatoes, mix up your desired dipping sauce(s). Put a few dollops of sour cream in a bowl and mix in a good amount of hot sauce until you reach your desired heat for a nice seasoned sour cream. Marinara sauce or sriracha ketchup would be other tasty condiments to try with these. Trust me, once you make these, you’ll be coming back to this recipe many more times.
